With the theme of “Brewing Local Culture and People,” Fermentation, Miso, and Noodles Mitsukabose (Representative: Kōsuke Saitō), located in Hotarugaike, Toyonaka City, Osaka Prefecture, is more than just a restaurant offering fermented foods and noodle dishes. It actively supports producers’ visions and values through its unique and community-oriented approach.
This spring, Mitsukabose will host two events for the first time — “Nukadoko MARKET” and “Nukadoko Banquet” — bringing together local producers, shops, and cultural creatives from the Hokusetsu region.

Debut of the local collaborative fermented beer “Sarumayama Shikao.”

Creators unable to join during the day are especially welcome to attend the evening festivities.
From 9:00 PM to 11:00 PM, there will also be a casual drink-only session: “Nukadoko Night.”
About the Organizer: Mitsukabose
Founded in 2007, Mitsukabose was the first miso ramen specialty shop in the Kansai region. Since 2012, it has embraced the mission of “Brewing Local Culture and People,” promoting community building through collaborative food initiatives. In 2022, it unified its two locations under the current brand name. The goal: to make a positive, lasting impact through the power of culinary culture.
